¾ cup firmly packed brown sugar
½ cup granulated sugar
One 8 oz container vanilla or
plain low-fat yogurt
2 egg whites, lightly beaten
2 Tbsp vegetable oil
2 Tbsp fat-free milk
2 tsp vanilla
1 ½ cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt (optional)
3 cups quick or old-fashioned uncooked oats
1 cup diced dried fruit/raisins, cranberries
½ cup chopped almonds (optional)
Heat oven to 350 F . In a large bowl, combine sugars, egg whites, oil, milk, and vanilla; mix well. In a medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and fruit.
Spread dough onto bottom on UN greased 13 X 9 baking pan.
Bake 30 min until golden brown. Cut into bars. Store in tightly covered tine.
